Prep time: 15 minutes
Serves: 4 to 6 people
- 1.5 to 2 lbs boneless chicken thighs
- 1 green pepper, chopped
- 14.5 oz black beans
- 16 oz jar salsa, mild
- 1.25 to 2 oz packet taco seasoning mix, mild
- 1 cup chicken broth
- 1 cup sour cream, low fat
Spray slow cooker with cooking spray and add chicken, salsa, black beans and green pepper. Mix taco seasoning in bowl with broth and pour over chicken. Cook on low for about 6 hours or high for four hours. Right before serving stir in sour cream.
About ½ of 16 oz baby carrots, petit cut
Cook carrots over simmering water for about 10 minutes until tender.
